Banana Nut Muffins with Cream Cheese Frosting
Making your own banana nut muffin can be fulfilling. It is especially true if the one you baked is not only delicious but also moist, fluffy, and soft – the perfect texture for a banana muffin. It is also one of those desserts that you can easily and quickly make at home. These banana nut muffins with cream cheese frosting is something you can prepare at home without the hassle.
- 4 overripe bananas
- 2 cups of all-purpose flour
- ½ tsp. salt
- 1 and ½ tsp. baking soda
- 2 eggs
- 1 cup brown sugar
- ¾ cup melted and cooled unsalted butter
- ½ cup chopped pecans
- 1 tsp. pure vanilla extract
Cream Cheese Frosting Ingredients:
- 4-oz. cream cheese
- 1 and ¾ cups confectioner’s sugar
- 1 tsp. vanilla
Preheat your oven by setting it at 375 degrees Fahrenheit. Prepare two muffin tins and butter it lightly.
Prepare a large-sized bowl and mix baking soda, salt, and flour in there. Set this mixture aside.
Use a fork to mash two of the bananas in a small-sized bowl. Do so until the mashed bananas have some texture.
Whip the two remaining bananas and sugar for around three minutes using an electric mixer that has a wire whisk. Add eggs, vanilla, and melted butter into the mixture. Beat well. Do not forget to scrape down both sides of the bowl one or two times during the time you are beating the mixture.
Add the dry ingredients into the mixture. Mix well until everything is well incorporated. The next thing to do is to fold in the nuts as well as the mashed bananas using a spatula.
Add a spoonful of the batter into each muffin tin. It would be best to fill each tin halfway.
Bake in the preheated oven for around eighteen to twenty minutes or once the toothpick you insert in a muffin comes out clean.
Prepare the frosting by whipping vanilla, confectioner’s sugar, and cream cheese using your electric mixer. You can also whip the ingredients manually by hand.
Allow the muffins to cool for a few minutes before removing from the muffin tin. Apply the frosting.
Serve either at room temperature or while warm.
When making this recipe, ensure that you are using really ripe bananas. Note that the riper they are, the sweeter the result will be. One sign that the banana is perfect for this recipe is when it has brown spots. It is a sign that the banana will mash easily while producing a nicely and naturally flavored banana muffin.
Since brown sugar is a key ingredient in this recipe, ensure that you use a soft, fresh, and moist one. You are also allowed to use your preferred nuts. For instance, you can also use chopped walnuts, macadamia nuts, or hazelnut in place of pecans. You can even combine them to produce an even better flavor and texture of this muffin.
Also, remember that this banana nut muffin will taste the best if you serve it on the day you prepared it. However, you can still enjoy leftovers, if there are any. Just put the leftovers in a tightly covered container and store it in a place with room temperature. You can enjoy it for two more days in that case. You can further increase their lifespan for a few more days by storing in your fridge.
