Crunchy Broccoli and Chickpea Almond Salad Recipe

Broccoli and Chickpea Almond Salad

This specific variation of the broccoli and chickpea salad boasts of its nice curry flavor and rich and healthy tahini dressing. It is vegan-friendly and is known to be rich in fiber and protein. The good thing about it is that it is so filling. You can also prepare it in around 20 minutes or less.

Salad Ingredients:
  • 1 head of finely chopped broccoli
  • 1 can rinsed and drained chickpeas
  • 1/2 cup carrots (shredded) 
  • ½ cup almonds (toasted and sliced)
  • ½ cup cranberries (dried)
  • ¾ cup fresh cilantro (chopped)
  • 1 bunch chopped green onions
Dressing Ingredients:
  • ¼ cup tahini
  • 3 to 5 tbsps. warm water
  • Add ½ juiced large lemon
  • Add 1 finely minced garlic stove
  • 1 to 2 tsp. of pure maple syrup
  • ½ tbsp. ginger (freshly grated)
  • ½ tsp. each of salt and ground turmeric
  • 1 tsp. yellow curry powder
  • Some freshly ground black pepper
  1. In a large-sized bowl and add the chickpeas and finely chopped broccoli in there. Mix in the carrot, green onion, cilantro, and cranberries. Set this mixture aside.
  2. Prepare the tahini dressing. All you have to do is to whisk all the dressing ingredients in a small-sized bowl. Mix well.
  3. Once properly mixed, drizzle this dressing immediately over the broccoli and chickpea salad.
  4. You should then sprinkle almonds over the salad. Toss several more times.
  5. Serve right away together with freshly squeezed lemon. You may also store it in your fridge so you can serve it later. You can actually keep it in your fridge for a max of 5 days.
How to Toast the Almonds?

This crunchy broccoli and chickpea almond salad requires the use of toasted almonds. The good news is that toasting the almonds is easy. All you have to do is to put a pan over medium heat.

Add and stir sliced almonds there using a spatula. Make sure to stir the almonds every 30 seconds until you notice that they turn to golden brown. The entire process takes around five minutes. Reduce heat in case you notice the pan starting to produce smoke. The reduced heat can help avoid burning.

Broccoli and chickpea salad is indeed one of those recipes that you can make if you want to stick to a healthy lifestyle. The great thing about this salad is that you can store it in your fridge for a few days, so you can serve it later. It can even last for an entire week.
