There is nothing better than a Raspberry Crumb Cake, well maybe an Apple Crumble Cake but you get the point. This recipe comes with a disclaimer, if your family is like mine, then this cake will not last very long as it is very delicious. During the holidays and even on a occasional Sunday I can remember grandma making this cake in the kitchen. The smell is amazing. Ingredients
4ouncescream cheese, room temp
1/4cup½ stick butter, softened
1/2cup ofsugar
2 mediumeggs or 1 large
3tablespoonsmilk
1/2teaspoonvanilla extract
3/4cup+ 2 tablespoons flour
1/2teaspoonbaking powder
1/4teaspoonbaking soda
1/8teaspoonsalt
1/4cupraspberry jam

Directions
Preheat oven to 350 degrees.
In a large bowl, add soften cream cheese, butter, & sugar with an electric mixer or by hand. Mix in egg, milk, and vanilla until smooth. If using an electric mixer turn the mixer on slow and then mix in flour, baking powder, soda, and salt.
Make sure to grease your baking dish then slowly spread the batter into the dish.
Add drops of Raspberry jam on top and then swirl through batter with a wooden spoon. (*you can use any spoon, but baking with a wooden spoon seems more pure)

Crumble Topping
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
When making the topping, add all ingredients in a large bowl, sugar, flour, cinnamon, and butter, and mix until it turns into crumbs. Sprinkle the topping all over the cake and bake until golden brown for approximately 25 minutes, Mix should come out clean with a toothpick after baking. Remove from the oven and let cool for at least 10 minutes.
